This vibrant Wild Specialty Beer presents a saturated profile driven by an intensive blend of Nectarine, Apricot, and Passion Fruit. The 7.5% ABV and 20 BLG original gravity signal a substantial, pastry-influenced structure where the sharp, tropical acidity of Passion Fruit cuts through a dense, velvety base of stone fruits. Expect a complex interaction between the bright lactic tartness and a doughy, custard-like malt presence. The fruit character remains primary, transitioning from the zesty, floral aromatics of Nectarine to a lingering, succulent finish of jammy Apricot, all supported by a smooth, contemporary mouthfeel that balances sourness with a soft, pastry-inspired sweetness.
Appearance. SRM 6-8; pours a deep, hazy peach-orange with a thick, frothy ivory head that shows moderate retention and leaves light lacing on the glass.
Aroma. High intensity aromatics of fresh nectarine and ripe apricot dominate, supported by the sharp, tropical tang of passion fruit. Low doughy malt sweetness and a clean lactic acidity are present, with very light spicy fermentation notes but no significant funk.
Taste. A bold initial impression of tart passion fruit quickly gives way to the fleshy, sweet flavors of apricot and nectarine. The malt provides a biscuit-like, pastry-style backbone that balances the high acidity. Hop bitterness is virtually absent, allowing the fruit esters and lactic tang to lead into a long, sweet-tart finish with a lingering stone fruit aftertaste.
Mouthfeel. Medium-full body with a silky, creamy texture reflecting the high original gravity. Carbonation is moderate, providing enough lift to prevent the beer from feeling heavy. A very light alcohol warmth is present but well-integrated.
