Deeds Brewing Ruminations

Ruminations is a nuanced Saison that marries the rustic complexity of mixed-culture fermentation with a vibrant expression of white peaches. Having spent a year in French oak before a four-month maceration on fruit, it presents a bouquet of juicy stone fruit, orange blossom, and a playful hint of melon and sherbet. The influence of the peach pits introduces a delicate nuttiness and subtle wood character, while the malt base evokes freshly baked croissants. This elegant ale balances a soft, creamy acidity with a bone-dry finish, showcasing the refined intersection of patient barrel aging and intensive fruit maceration.
Appearance. Pours a brilliant straw to blonde color (3-5 SRM) with a tight, dense white head that exhibits excellent retention and leaves consistent lacing down the glass.
Aroma. High intensity, dominated by bright and juicy white peach. Secondary layers feature orange blossom, honeydew melon, and a confectionary note like pez candy. A sophisticated malt presence suggests croissant pastry and fresh bread, complemented by very light floral honey.
Taste. Initial impression is led by fresh peach skin and a light, creamy lactic acidity. The malt character is soft and grainy, resembling fresh bread. Mid-palate reveals a slight nuttiness and fine woody tannins derived from the peach pits and French oak. It is highly attenuated with no residual sweetness, finishing bone-dry and clean with lingering stone fruit.
Mouthfeel. Medium-light body with a remarkably soft and creamy texture. Carbonation is moderate to high, providing an effervescent lift that balances the acidity. Negligible alcohol warmth at 4.9% ABV.
