Deeds Brewing’s Nocturnal is a refined Petite Saison that showcases the delicate interplay of mixed-culture fermentation and second-use fruit. This sessionable ale delivers a nuanced sensory profile defined by the earthy, tart presence of boysenberries, which provide a soft, vine-ripened berry character without overwhelming the rustic base. The mixed culture contributes a zesty acidity and subtle barnyard funk that melds seamlessly with the classic peppery phenols of the yeast. Finishing bone-dry and highly effervescent, it balances its bright fruit notes with a lean, grainy malt backbone, offering a complex yet exceptionally refreshing expression of the style.
Appearance. Pours a hazy, pale ruby with soft purple highlights and moderate clarity. It supports a bubbly, mousse-like pink-tinted head with moderate retention and light lacing.
Aroma. Moderate to high intensity. A bouquet of tart boysenberry, wild raspberry, and earthy berry skins leads into a spicy yeast profile of cracked black pepper. Hints of lemony acidity and light funk from the mixed culture are balanced by a background of crackery, grainy malt and very low spicy hops.
Taste. Initial tartness of wild berry and citrus gives way to a rustic, grainy malt core. The boysenberry provides a delicate, earthy fruit flavor with a hint of skin-tannin. Hop bitterness is low, allowing the crisp acidity to lead the balance. The finish is remarkably dry and clean, with a lingering spicy phenolic aftertaste.
Mouthfeel. Light to medium-light body with high, effervescent carbonation. There is a very slight, pleasant astringency from the berry skins and a crisp, refreshing snap on the tongue. No perceptible alcohol warmth.
