This award-winning Melomel presents an intense sensory journey, balancing a massive sack-strength potency with a sophisticated dry finish. The aromatic profile is dominated by the concentrated essence of whole raspberries and dark sweet cherries, which find harmony with the delicate, floral undertones of blackberry blossom and raspberry blossom honey. On the palate, the high alcohol is remarkably well-integrated, providing a luxurious warmth that carries flavors of tart red berries and rich, jammy stone fruit. The fermentation is exceptionally clean, allowing the pure varietal honey character and fruit tannins to provide structure and complexity without the weight of residual sugar.
Appearance. Deep garnet to dark ruby color (SRM 30+); brilliant clarity with no haze. Still, with no head or lacing, exhibiting thick, slow-moving legs on the glass indicating high viscosity and alcohol content.
Aroma. High intensity aroma of fresh, slightly tart raspberries and rich, dark cherry skins. A distinct floral honey character from the blackberry and raspberry blossoms provides a sweet, perfumed background. Clean fermentation with a noticeable but smooth alcohol presence; no solventy notes or esters beyond the fruit.
Taste. The initial impression is one of intense fruit concentration, featuring sharp raspberry acidity and the rounded, fleshy depth of dark sweet cherries. Despite the high starting gravity, it drinks quite dry with very little residual sweetness. The honey flavors are present as a floral, earthy foundation rather than sugar. High alcohol provides significant but pleasant warmth. The finish is long and fruit-forward with a light, pleasant tannic grip.
Mouthfeel. Full-bodied and viscous; still, with no carbonation. Significant alcohol warmth is present but remains smooth and well-integrated. A slight tannic astringency from the whole fruit skins provides a wine-like structure and contributes to the dry perception.
