This Specialty Cider offers a sophisticated crossover between heritage orcharding and low-intervention winemaking. Utilizing organic tall-stem apples and a wild fermentation, the profile is defined by a two-month maceration on Riesling skins from the Mosel. This infusion imparts a distinct orange wine character, blending bright malic acidity with the floral aromatics typical of the grape variety. Nine months of aging on the lees provides a delicate bready complexity, while the natural bottle conditioning ensures a fine, elegant mousse. Expect a structured, dry experience where rustic apple funk meets the refined tannic grip and vibrant stone fruit of cool-climate grapes.
Appearance. Deep gold to light amber with a slight, natural haze from sur lie aging. Features fine, persistent bubbles and a delicate white collar of foam.
Aroma. High intensity with a complex blend of tart orchard apples and floral, citrusy Riesling must. Pronounced wild fermentation character including earthy funk, hay, and light spice, backed by a subtle brioche-like yeastiness from extended lees contact.
Taste. Initial impression is sharply acidic and dry. Flavors of heritage apples are complemented by the stone fruit and mineral notes of the grape skins. A firm tannic structure provides an orange wine vibe, leading to a bone-dry, lingering finish with a clean, wild phenolic complexity.
Mouthfeel. Medium-light body with high, sparkling carbonation that feels prickly and refreshing. Noticeable tannic astringency provides structure without being harsh, accompanied by a faint warming sensation from the alcohol.

Cider gemaakt van appels uit onze biologische hoogstam boomgaard, met een natuurlijke (wilde) gisting.
Gedurende 2 maanden werden riesling schillen van een bio wijnmaker uit de moezel regio in deze cider geweekt. Het resultaat is een cider met een sterke Orange wijn vibe.
Gebotteld in juli 2023 na 1 maand gisting, en 9 maanden rijping op de lies.
Bij het bottelen werd 8gr/l suiker toegevoegd voor een 2e gisting op de fles, en zo fijne bubbels te bekomen. Ook voor de gisting op de fles maken wij gebruik van de natuurlijke gisting zonder commerciële gisten toe te voegen.
