On the palate, it delivers a sharp, refreshing acidity and a mild tannic structure that provides grip without being harsh. The mouthfeel is elevated by fine, champagne-like bubbles from bottle conditioning, resulting in a bone-dry, clean finish that highlights the purity of the fruit and the wild yeast character.
Appearance. Pale straw to light gold (SRM 2-4), fine-beaded effervescent white ring, brilliant clarity.
Aroma. High intensity of fresh and bruised apples, pronounced earthy wild yeast funk, leather, and a subtle creamy, bready note from extended lees contact.
Taste. Initial tart apple impression, bone-dry malt-equivalent profile, moderate tannic bitterness, earthy fermentation character, lingering crisp acidity with a clean finish.

Cider gemaakt van appels uit onze biologische hoogstam boomgaard, met een natuurlijke (wilde) gisting. Hierbij werd enkel bij het persen 20mg sulfiet/l toegevoegd.
Gebotteld in juli 2023 na 1 maand gisting, en 9 maanden rijping op de lies.
Bij het bottelen werd 8gr/l suiker toegevoegd voor een 2e gisting op de fles, en zo fijne bubbels te bekomen. Ook voor de gisting op de fles maken wij gebruik van de natuurlijke gisting zonder commerciële gisten toe te voegen.
