This Brett Beer presents a complex, forest-forward profile driven by the infusion of Noble Fir and Spruce Tips. The nose is a vibrant interplay of resinous pine, bright citrus, and the tropical stone fruit esters characteristic of a young Brettanomyces fermentation. Aging in Red Wine Barrels introduces a sophisticated vinous depth and a hint of oak-derived tannin, grounding the ethereal wild funk of wet hay and earth. On the palate, the evergreen notes merge with a bone-dry finish and a light, peppery spice. It is a harmonious marriage of coniferous earthiness, cellar-born funk, and elegant grape-skin nuances.
Appearance. SRM 5-7. Deep gold to pale amber with a persistent, fine-beaded white head that leaves delicate lacing. Displays a slight haze characteristic of wild fermentation.
Aroma. High intensity with dominant aromas of fresh pine needles and resinous spruce. Complex secondary notes of apricot, pineapple, and light funk (wet hay) from the Brettanomyces, supported by a subtle red wine vinous character and toasted oak.
Taste. Initial impression is crisp and highly attenuated. Flavors of bright citrus peel and forest floor resin from the Noble Fir and Spruce Tips lead into a mid-palate of tart red grape and mild oak tannin. Bitterness is moderate but accentuated by the dry finish. Low fruity esters of pear and apple mingle with a developing earthy funk. Finish is bone dry, clean, and lingering.
Mouthfeel. Medium-light body with high carbonation that provides a lively, scrubbing texture. Very low alcohol warmth. A slight tannic grip from the red wine barrels adds structure without astringency.
