This Imperial Stout offers an immense, multi-layered sensory profile born from a five-year maturation in Bourbon whisky maple barrels. A deep, oily viscosity delivers a concentrated bouquet of dark chocolate, espresso, and black licorice, seamlessly intertwined with the rich, woody sweetness of maple and charred oak. The extended aging transforms the primary roast into complex notes of leather, dried figs, and a sophisticated vinous, port-like character. Pronounced Bourbon notes provide a smooth warmth that balances the decadent malt sweetness. It is a masterpiece of dark intensity, where the raw power of the base beer has mellowed into a velvety, harmonious experience.
Appearance. Jet black and opaque (40+ SRM). A modest but persistent deep tan head leaves thick, oily lacing. Exceptional viscosity is evident through pronounced legs on the glass when swirled.
Aroma. High intensity. Rich notes of dark chocolate, roasted coffee beans, and molasses. Dominant secondary aromas of maple syrup, toasted oak, and Bourbon. Esters of raisins and prunes are present alongside a mature, vinous oxidation resembling old sherry or port.
Taste. Massive initial impression of bittersweet chocolate and espresso. Mid-palate reveals layers of maple sweetness, vanilla, and oak tannins. Bitterness is moderate but balanced by the malt density and spirit character. The finish is long and complex, featuring dark fruit leather, aged spirit warmth, and lingering roasted grain.
Mouthfeel. Full-bodied, viscous, and chewy with a velvety, luscious texture. Carbonation is low to moderate. A significant, smooth alcohol warmth is present, well-integrated without being harsh or solventy.
