This monumental Imperial Stout emerges from five years of maturation in Bourbon whisky casks, showcasing a masterful blend of the brewery's Black Albert and Marius. The extended aging transforms the profile into a decadent tapestry of dark chocolate, vanilla, and charred oak. Intense aromas of espresso and black licorice meld with deep vinous notes and dried figs, reflecting its long sleep in the wood. On the palate, the integration of spirituous warmth and velvety malt creates a complex experience of cocoa nibs, toasted marshmallow, and a lingering leather finish. It is a harmonious, viscous liquid that celebrates the art of patience and wood-driven evolution.
Appearance. Jet black and completely opaque. It pours with a minimal, deep tan head that shows low retention due to high alcohol content, leaving thick, oily legs on the glass as it swirled.
Aroma. High intensity with a rich blend of dark chocolate, espresso, and black licorice. The bourbon barrel influence is prominent, contributing notes of vanilla, toasted oak, and a slight spirituous character. Extended aging provides a complex vinous, port-like quality with deep fruit notes of fig and raisin.
Taste. Initial impression is intensely rich and bittersweet. Deep flavors of roasted grain, cocoa, and coffee are balanced by a mid-palate of caramel and vanilla-soaked oak. The fermentation character features dark plum and prune esters. It possesses a firm bitterness that is well-integrated and smoothed by age, leading to a long, warming finish of charred wood and dark fruit.
Mouthfeel. Very full-bodied and chewy with a luscious, velvety texture. Carbonation is low, enhancing the beer's weight. A smooth, noticeable alcohol warmth is present but remains sophisticated and never sharp.
