This celebratory Saison presents a vibrant, rustically complex profile driven by a substantial addition of locally-grown rye and a bold infusion of grapefruit. The sensory experience opens with a sharp, citrusy zest that intertwines seamlessly with the peppery, spicy phenols and fruity esters typical of the style. The rye provides a distinct earthy depth and a characteristic spicy graininess, anchoring the bright, expressive hop and fruit character. Effervescent and highly attenuated, it finishes remarkably dry with a lingering pithy bitterness, creating a refreshing yet sophisticated profile that balances festive fruit intensity with a traditional farmhouse soul.
Appearance. Deep gold to pale orange (6–8 SRM). Topped by a dense, rocky, long-lasting ivory head that leaves persistent Belgian lace. Slight haze is present due to the high protein content of the rye and lack of filtration.
Aroma. High intensity. Bold grapefruit zest and juice dominate initially, layered over moderate peppery phenols and fruity esters of lemon and pome fruit. The malt character is notable for a spicy, bready rye quality. Hop aroma is moderate, leaning toward earthy and floral tones that complement the citrus additions.
Taste. The initial impression is bright and citrus-forward. A grainy, spicy rye malt flavor provides a rustic mid-palate, balanced by moderate-to-high bitterness that is amplified by grapefruit pith. Fermentation character is dry and peppery. The finish is very dry and effervescent, with a lingering aftertaste of citrus oils and spicy grain.
Mouthfeel. Medium-light body with a slightly oily slickness from the rye. Very high carbonation creates a lively, effervescent, and scrubbing sensation on the tongue. Alcohol warmth is light and well-integrated.
