NEIPA - New England IPA 5.5 º
Brewed with a soft, protein-rich malt bill and fermented with London Ale yeast, this New England IPA delivers a thick, juice-like sensory experience. High-intensity tropical notes of passion fruit and peach from Galaxy hops dominate the nose, seamlessly blending with the ripe stone fruit and bright citrus characters of Idaho 7. A subtle, resinous, and damp earth undertone from Columbus hops grounds the intensely fruity profile. Active fermentation dry-hopping unlocks a complex array of biotransformed esters, resulting in a smooth, low-bitterness palate with a soft, pillowy texture that carries the vibrant hop character effortlessly into a clean, off-dry finish.
Appearance. Straw to light gold with a deep, opaque, and uniform haze that gives the beer a luminous, glowing appearance. Pours with a dense, persistent, meringue-like white head that leaves thick, rocky lacing on the glass. No visible particulates or yeast clumps are present.
Aroma. High-intensity hop aroma bursting with ripe passion fruit, guava, and sweet citrus zest, complemented by notes of peach, apricot, and a faint, resinous herbal undertone. Low, neutral, slightly bready, and grainy wheat-like malt support in the background. Esters are highly expressive and fruity, blending harmoniously with the tropical hop profile. Free of any butter, diacetyl, or harsh grassy notes.
Taste. Initial wave of juicy tropical fruit flavor, featuring dominant notes of pineapple, passion fruit, and mandarin orange. Malt flavor is low, presenting as a soft, bready, flour-like background. Hop bitterness is low to moderate, well-masked by the soft body and lacking any harshness or hop bite. Yeast esters are complementary and fruity. Finishes soft and off-dry, with a lingering, pleasant tropical fruit aftertaste that invites another sip.
Mouthfeel. Medium body with a remarkably soft, pillowy, and smooth texture. Carbonation is moderate. Alcohol warmth is very light, appropriate for the moderate gravity. Lacks any astringency, hop burn, or raw starchy graininess.
