This bold Wild Specialty Beer presents a lush, tropical-forward profile driven by the interplay between Sacch. Trois yeast and an assertive hop trio. Vibrant aromas of pineapple, mango, and stone fruit from Idaho 7 and Citra are complemented by the distinct watermelon and candy-like sweetness of El Dorado. A clean, lactic acidity brightens the palate, cutting through the medium-bodied, juicy malt base. The fermentation character is unmistakably wild yet refined, offering hints of tart stone fruit that meld seamlessly with the hop resins. It finishes crisp and dry, leaving a lingering citrus zest and a bright, refreshing tartness.
Appearance. Deep gold to light amber (6-9 SRM). Hazy to opaque with a lush, unfiltered appearance. The off-white head is moderate in size with fair retention, though the high acidity may cause it to dissipate faster than a standard IPA.
Aroma. High intensity aromatics of tropical fruit, specifically mango, papaya, and pineapple. The Idaho 7 and Citra hops provide a pungent citrus and stone fruit layer, while El Dorado adds a sweet, fruit-punch character. A clean, lemony lactic sourness is evident, alongside subtle earthy, spicy esters from the Sacch. Trois fermentation.
Taste. Initial impression is a sharp, refreshing lactic tartness followed immediately by an explosion of tropical fruit. Citra provides grapefruit and lime zest, while El Dorado and Idaho 7 contribute flavors of peach, watermelon, and dried apricot. The malt is supportive and crackery but stays in the background. Bitterness is moderate and clean, balancing the acidity without being harsh. The finish is very dry and mouth-watering with a lingering citrus resin.
Mouthfeel. Medium body with a soft, lush texture. Carbonation is moderate-high, providing a lively prickle that enhances the perception of sourness. Alcohol warmth is light and well-integrated. Very low astringency despite the heavy hopping.
