This Sour IPA delivers a vibrant sensory experience defined by its lively acidity and lush hop profile. The use of Sacch. Trois yeast provides a foundation of tropical pineapple esters that seamlessly merge with the bright citrus and grapefruit notes of Citra hops. Complementing this is the unique contribution of Belma hops, which adds nuances of ripe strawberry and sweet melon. The souring process introduces a crisp, refreshing tartness that balances the juicy hop character, resulting in a complex, fruit-forward profile. With its bold aromatic punch and clean, acidic finish, it embodies a contemporary, playful approach to the Wild Specialty Beer style.
Appearance. Light straw to golden (SRM 3-5) with a persistent, moderate haze. Topped by a frothy white head with fair to moderate retention and light lacing, though the head may dissipate faster due to the beer's acidic nature.
Aroma. High intensity with a complex blend of tropical pineapple and mango esters from the yeast. Prominent hop aromatics feature Citra’s grapefruit and lime zest alongside the unique strawberry and melon notes of Belma. A clean, lactic acidity provides a sharp, tangy backdrop, while malt remains low and neutrally grainy.
Taste. A sharp, refreshing lactic tartness leads, immediately followed by layers of tropical fruit. The Citra hops provide citrus and resinous mango, while Belma contributes subtle red berry and melon flavors. Yeast-derived pineapple notes persist throughout. Malt presence is very low, offering a light cracker base. Bitterness is low to moderate, balanced by acidity rather than sweetness. The finish is remarkably dry and tart with a lingering fruity hop essence.
Mouthfeel. Medium-light body with moderate to high carbonation that enhances the crisp, puckering sensation of the acidity. Low alcohol warmth. Smooth but not heavy, with a clean and highly refreshing finish that lacks harsh astringency.
