Fermented with multiple yeast strains, it offers a deeply layered fermentation profile where peppery phenols and stone fruit esters harmonize with a noticeable, rustic funk. The result is a vibrant, multifaceted experience where a refreshing tartness cuts through the fruity depth. Its high attenuation provides a crisp, dry finish, ensuring the tropical and herbal complexities of the South American fruit remain the focal point of the palate.
Appearance. Hazy, pale gold to deep straw (4-6 SRM) with a thick, frothy white head that shows moderate persistence and delicate lacing.
Aroma. High intensity aroma dominated by tropical feijoa notes of guava and pineapple, intertwined with a refreshing minty herbalism. The base beer provides a backdrop of peppery phenols and spicy yeast character, accompanied by a light, earthy funk and moderate pome fruit esters. Malt character is low and crackery.
