This elegant Saison showcases a vibrant interplay between rustic farmhouse yeast and the delicate infusion of white peaches. A shimmering gold pour precedes a complex bouquet where ripe stone fruit esters meld with characteristic cracked black pepper phenols and a hint of floral, earthy hops. On the palate, the white peaches provide a fleshy, succulent fruit character that is immediately countered by a bone-dry finish and high attenuation typical of the style. The light, grainy malt profile provides a subtle canvas for the effervescent carbonation and firm bitterness, resulting in a refreshing yet sophisticated profile that emphasizes fruit-forward yeast character.
Appearance. Deep gold to pale orange (SRM 6-8) with a slight, hazy veil from the fruit addition. Features a tall, dense, rocky white head with excellent retention and significant Belgian lacing.
Aroma. High intensity. Prominent esters of ripe peach and apricot are balanced by spicy yeast phenols reminiscent of black pepper. Low earthy and floral hop notes sit beneath a light, bready, and grainy malt base.
Taste. Initial impression is fruit-forward with succulent white peach flavors, quickly shifting to a dry, peppery middle. Low grainy malt sweetness is overtaken by a moderate hop bitterness. The fermentation character is clean but complex, ending in a very dry, crisp, and slightly spicy aftertaste.
Mouthfeel. Medium-light body with very high, effervescent carbonation. There is a light, well-integrated alcohol warmth consistent with its strength. Smooth and crisp with no astringency.
