This spontaneous Brett Beer showcases the profound depth of four years in oak barrels, presenting a complex tapestry of funky and fruit-forward sensations. The extended maturation integrates the subtle, herbal, and woody nuances of Aged Hops, which meld seamlessly with the Brettanomyces-driven notes of wet hay, leather, and dried stone fruit. On the palate, a delicate tannic structure from the wood provides a framework for layers of apricot and dusty earth. It is exceptionally dry and effervescent, offering a sophisticated balance between rustic fermentation character and the refined, oxidative elegance expected from a long-aged wild ale from de Garde.
Appearance. Deep gold to light amber with a slight, hazy luminescence. It pours with a thin, white, fizzy head that dissipates quickly, leaving minimal lacing, characteristic of extended wood aging.
Aroma. High intensity and deeply complex. Pronounced Brettanomyces funk leads with notes of barnyard, damp earth, and aged leather. The Aged Hops contribute a distinct herbal, hay-like, and slightly earthy character rather than fresh floral notes. Underneath, there are hints of dried apricot, lemon zest, and a subtle vanillin oak presence.
Taste. The initial impression is bone-dry and crisp. Mid-palate flavors reveal a mix of tart cider apples, underripe peach, and a persistent rustic funk. The Aged Hops provide a low, structured bitterness with a woody, tea-like quality. Malt is minimal, presenting as a faint cracker-like backdrop. Mouthfeel. Light-bodied and highly attenuated. Carbonation is moderate-high and prickly, enhancing the dry sensation. There is a very slight oak-derived tannic astringency and zero alcohol warmth, making it exceptionally refreshing despite its age.
