This masterfully blended Spontaneous Wild Ale showcases de Garde’s signature coolship complexity, shaped by three years of development and maturation in oak gin barrels. On the nose, a rustic barnyard funk and wet hay mingle with sharp botanical notes of juniper, coriander, and dried citrus peel. The palate is bracingly bone-dry, delivering layers of white peach, lemon zest, and a distinctive herbal gin spice that complements the light, non-lactic acidity. Oak tannins provide a structured, woody backbone, while the effervescent carbonation elevates the intricate marriage of wild microflora and gin-soaked wood into a crisp, sophisticated finish.
Appearance. SRM 3-5. Pale gold to deep straw color with a moderate, hazy turbidity typical of spontaneous fermentations. A rocky, bright white head forms with moderate retention, leaving light, wispy lacing.
Aroma. High intensity. Forward aromas of horse blanket, leathery funk, and earthy hay from spontaneous fermentation. Layered with botanical gin influences including juniper berries, cracked coriander, and spruce. Soft fruity esters of lemon and apricot emerge alongside a delicate toasted oak background.
Taste. Bone-dry initial impression. Flavors of tart citrus, green apple, and white grape are balanced by rustic, earthy funk. The mid-palate reveals complex gin botanicals and herbal spice which integrate with the oak’s woody tannins. Very low bitterness; the structure is driven by acidity and high attenuation. The finish is exceptionally clean, lingering with a floral, peppery botanical note.
Mouthfeel. Light to medium-light body with high, prickly carbonation that creates a champagne-like effervescence. Light alcohol warmth. A slight puckering astringency from oak tannins and wild acidity adds to the crisp, refreshing character.
