The Nectarine is a masterful expression of spontaneous fermentation, showcasing a vibrant interplay between wild funk and sun-ripened fruit. Aged for twenty-one months in oak, this Wild Ale undergoes a secondary fermentation on fresh Oregon grown Nectarines from Baird Family Orchards. The sensory profile is defined by an explosion of juicy stone fruit and complex, rustic character. Notes of wet hay, aged wood, and earthy Brettanomyces weave through the fruit's natural sweetness, while the long conditioning period ensures a refined, bone-dry finish. It represents a harmonious balance of wood-aged depth and bright, seasonal fruit intensity, underpinned by a lively effervescence.
Appearance. Deep golden to light orange (6-9 SRM) with a slight, natural haze. Pours with a moderate white head that exhibits fair retention and leaves delicate lacing.
Aroma. High intensity stone fruit aroma featuring fresh nectarine and apricot. A pronounced funk provides complexity, offering notes of barnyard, wet hay, and leather. Subtle oak tannins and a faint floral quality emerge as it warms.
Taste. The palate leads with juicy, ripe nectarine, transitioning quickly into a complex array of funky Brettanomyces flavors including earth and hay. The malt is cracker-like and minimal, supporting a very dry, crisp finish. Bitterness is very low, allowing a light fruit-derived acidity and oak character to provide structure.
Mouthfeel. Medium-light body with high carbonation that creates a prickly, refreshing sensation. Very low astringency from the oak and a light alcohol warmth that is well-integrated into the dry finish.

A spontaneous wild ale, inoculated in our coolship, then fermented and aged for an average of 21 months in oak. After aging, select barrels were chosen for their ability to complement the amazing fruit, and blended into a secondary oak tank for refermentation on fresh Oregon grown Nectarines from Baird Family Orchards. The tank was tracked for approximately two and a half months, then run into our blending tank for hand bottling when ready. We further conditioned this beer in bottle for approximately five months. Funky and with a vibrant fruit character, this is deliciously ready to be enjoyed!!
