This spontaneous wild ale presents a masterful blend of three years, showcasing de Garde’s signature coolship-driven character. As a Brett Beer, it leads with an aromatic complexity of dried hay, dusty cellar funk, and bright lemon zest. The oak-barrel aging introduces subtle tannins and a whisper of vanilla that softens the dry, highly attenuated finish. Expect a refreshing interplay of stone fruit esters—reminiscent of peach and apricot—balanced by a light, integrated acidity. Appearance. Pale gold to light amber (4-6 SRM). Clear to slightly hazy with a persistent, mousse-like white head that leaves delicate lacing.

Aroma. High intensity with dominant Brettanomyces character: wet hay, aged leather, and dusty earthiness. Vibrant fruity esters of lemon peel, green apple, and white peach are prominent. Subtle toasted oak and a faint, cracker-like malt backbone provide support, with no discernible hop aroma.

Taste. The palate is remarkably dry and crisp. Tart citrus and stone fruit flavors lead, followed by an evolving barnyard funk and earthy complexity. Hop bitterness is very low, allowing a light, lemony acidity to provide structure. Minimal malt sweetness quickly gives way to a lingering, bone-dry finish with a touch of woody oak tannin.
