This spontaneous Fruit Lambic presents a masterful balance of wild character and concentrated fruit. A deep ruby pour yields aromas of funky leather and damp oak, quickly overtaken by the vibrant, acidic punch of Montmorency and Morello cherries. The two-year barrel maturation integrates subtle tannins and a hint of almond-like pit character into the bright, lactic tartness. On the palate, the cherries evolve from sharp and zesty to deep and wine-like, supported by a bone-dry finish and a complex, barnyard-inflected funk typical of de Garde’s coastal spontaneous fermentations. It is an assertive, multi-layered, and elegantly aged expression of the style.
Appearance. Deep ruby red to mahogany color; features a pinkish-white, mousse-like head with moderate retention. Clarity is good with a slight, natural haze from the fruit solids.
Aroma. High intensity fermented fruit aroma dominated by tart Montmorency and Morello cherries. Complex secondary notes of leathery barnyard funk, goat hair, and dusty oak are present, alongside a sharp lactic acidity.
Taste. Initial impression is sharply tart and intensely fruity. The flavor of sour cherries is prominent, showing both bright zest and deeper, vinous notes. Traditional wild character follows with notes of hay, leather, and a light almond-like pit bitterness. There is no hop flavor or bitterness. The finish is bone-dry, lingering with a pleasant lactic pucker and a whisper of oak tannin.
Mouthfeel. Medium-light body with a lean, effervescent texture. Carbonation is high, creating a sparkling sensation. Includes a notable puckering tartness without being overly astringent; very light warming from the two-year aging.
