The sensory experience opens with a vibrant burst of tart red fruit and subtle almond-like pit notes, layered over a complex backdrop of farmhouse funk, wet hay, and aged oak. Spontaneous fermentation yields a nuanced depth of wild character that intermingles with the bright, acidic cherry punch. Nuances of vanilla and toasted wood from the barrel aging provide structure, leading to a bone-dry, effervescent finish that highlights both the fruit’s natural tartness and the rustic, earthy complexity of the Brettanomyces.
