This exceptional spontaneously fermented wild ale, aged in oak barrels for an average of twenty-nine months, delivers a deeply complex sensory experience defined by mature Brettanomyces character. A rustic and funky profile takes center stage, boasting prominent aromas of damp earth, wet hay, and crushed limestone, alongside a subtle wood-derived vanillin. The palate mirrors this complexity, revealing old leather and musty basement funk, beautifully balanced by dry, mineral undercurrents and a soft oak tannin. It finishes exceptionally dry, crisp, and clean, with a lingering echo of dusty cellar floors and aged oak wood.
Appearance. Deep gold to light amber in color, with a slight haze from spontaneous fermentation. Renders a thin, tight, off-white head with moderate retention and delicate lacing.
Aroma. High intensity aroma dominated by rustic Brettanomyces funk, exhibiting barnyard, wet hay, and old leather notes. Strong mineral and damp earth characteristics intertwine with aged oak, dusty wood, and very low, residual orchard fruit esters. No diacetyl or lactic sourness.
Taste. Begins with a crisp, highly attenuated impression. Complex flavors of earthy Brettanomyces, cobwebs, and leather are supported by a faint, neutral malt backbone. Low, clean wild acidity provides a bright counterpoint to a prominent mineral and dry, woody oak-barrel flavor. Finish is exceptionally dry, crisp, and clean, leaving a lingering aftertaste of dusty wood, earth, and Brett funk.
Mouthfeel. Medium-light body, showing significant dryness from high attenuation. Moderate to high carbonation provides an effervescent, lively mouthfeel. Very low, well-integrated alcohol warmth, with a faint, pleasant wood-derived astringency on the finish.

The Château is a four year blend of spontaneously fermented and aged barrels, with an average total age of approximately 29 months in oak. After tasting, blending, transferring and bottling, the beer was further conditioned in bottles for approximately 5 more months.

All of our favorite multi-year blends have a notable Brettanomyces funk to them, but each individual composition expresses its own unique personality. As a rather old composition, this beer leans in a much funkier direction. Mineral and earth characteristics dominate the aroma, with a complexity and intensity matched in the taste. It finishes with a very dry and crisp feel, allowing a lingering impression of the aged barrels and Brett character.
