Notes of stone fruit and citrus from the hops meld with the nuanced barnyard and hay character provided by the Brettanomyces. This Brett Beer is elegantly dry and hedonistic, showcasing a sophisticated interplay between the simple malt base and the complex, wood-aged fermentation character.
Appearance.Straw to light gold (3-5 SRM). Generally clear to slightly hazy with a thin, white, fizzy head that exhibits moderate to low retention; light lacing.
Aroma.Moderate to high intensity. Bright citrus and apricot hop notes mingle with moderate Brettanomyces funk, characterized by wet hay and a touch of earthiness. Low grainy-sweet pale malted barley scent. Subtle neutral oak and white wine must from the puncheons.
Taste.Initial impression is dry and vibrantly tart. Pale malted barley provides a crisp, crackery foundation. Hop flavor is subtle with notes of citrus peel and dried herbs.
