This elegant Spontaneous Wild Ale showcases the sophisticated marriage of two-year oak maturation and delicate Oregon Chamomile. The lengthy aging period imparts a nuanced rustic funk characterized by sun-dried hay and soft barnyard notes, which intertwine seamlessly with the chamomile's distinct herbal tea and bruised apple profile. As a Brett Beer, it presents a highly attenuated, bone-dry structure where the floral elements dance alongside a faint, lemony tartness and spicy vanillin from the wood. The result is a complex, meditative experience that balances the wild, spontaneous house character with the calming, earthy essence of the floral addition.
Appearance. Pours a hazy, pale gold (SRM 4–5) with a fine-beaded white head that recedes to a persistent collar, leaving delicate lacing on the glass.
Aroma. High intensity aromatics of dried chamomile flowers, herbal honey, and Granny Smith apple. Deeply integrated funk presents as wet hay and earthy basement, complemented by a spicy, toasted oak backdrop.
Taste. The palate leads with a bright, lemony acidity followed by a wash of floral chamomile and herbal bitterness. Dry oak tannins provide structure against a backdrop of apricot and pear esters. The finish is remarkably clean and bone-dry, lingering with a dusty, floral earthiness.
Mouthfeel. Light-bodied with a crisp, effervescent carbonation. A very slight tannic astringency from the two-year oak contact adds a pleasant, wine-like dryness without being harsh.
