De Dolle Special Extra Export Stout is a singular interpretation of the Foreign Extra Stout style, bridging English tradition and Belgian artistry. Dominated by a complex malt bill of Roasted, Caramel, and Pale malts, it delivers intense notes of dark chocolate and espresso. The use of the signature Oerbier yeast culture introduces a distinctive vinous tartness and dark fruit esters that dance alongside the firm bitterness of Nugget hops. This marriage of high-gravity roast and acidic character evokes the profile of nineteenth-century stouts. It finishes dry and warming, with a lingering, sophisticated interplay of charred grain and rustic orchard fruit.
Appearance. Opaque, jet-black appearance (SRM 40) with a large, dense, creamy tan head that demonstrates excellent retention and leaves thick lacing on the glass.
Aroma. High intensity aroma featuring prominent roasted grain, espresso, and dark chocolate. Moderate fruity esters of plum and black cherry are present, complemented by a subtle, vinous tartness and a low herbal hop note from the Nugget variety. A clean alcohol warmth is perceptible.
Taste. Initial impression is rich and bitter with flavors of cocoa, burnt toast, and molasses. The malt complexity from the Roasted and Caramel malts is balanced by a characteristic tartness from the house fermentation. Bitterness is medium-high and firm, leading to a moderately dry, acidic finish with a lingering roast and dark fruit aftertaste.
Mouthfeel. Medium-full to full body with a smooth, almost creamy texture. Carbonation is moderately high, enhancing the perceived tartness. A noticeable but well-integrated alcohol warmth is present without being harsh or fusel.
