De Brouwschuur Ympa is a Specialty IPA that artfully balances vibrant fruitiness with a surprisingly smooth, dark core. The aroma is dominated by an intense hop presence featuring tropical fruit and citrus notes, supported by a delicate background of toasted malt and light chocolate. On the palate, the hop-forward character delivers layers of stone fruit and resin, while debittered dark malts provide a sleek, roasted foundation without any harsh or ashy qualities. True to its description, the beer maintains a velvet-like smoothness and a firm bitterness, offering the punch of an American IPA with the sophisticated, dark profile of a Black IPA and a clean, dry finish.
Appearance. Dark brown to nearly black in color (SRM 35) with a persistent, light tan head that leaves moderate lacing. Though deep in color, it maintains clarity with no significant turbidity.
Aroma. High intensity hop aroma characterized by tropical melon, stone fruit, and bright citrus. The malt profile is restrained, offering low notes of toast and a hint of milk chocolate, while the fermentation remains clean with no significant esters.
Taste. An initial burst of juicy tropical and resinous hop flavors leads into a medium-low malt base. Restrained chocolate and light coffee notes emerge without burnt or acrid qualities. The bitterness is firm and high, consistent with the style, leading to a dry, slightly off-dry finish with a lingering fruity aftertaste.
Mouthfeel. Medium body with a characteristic smoothness that enhances drinkability. Moderate carbonation provides a lively feel, accompanied by a light, well-integrated alcohol warmth and zero astringency.
