Appearance. Deep, dark brown with ruby highlights (SRM 30-35). Exhibits a thick, persistent tan head with excellent lacing. Though nearly opaque, the beer shows brilliant clarity when held to light.
Aroma. Moderate to high intensity. Prominent rich malt sweetness with notes of caramel, toffee, and dark fruit such as raisins and prunes. An integrated, pleasant wood smoke character provides a savory layer. Very low chili pepper aroma; clean fermentation profile with no hop aroma.
Taste. Initial impression is rich and malty, followed by layers of chocolate and toasted bread. The smoke flavor is assertive yet smooth, never acrid or phenolic. Medium-low bitterness allows the malt sweetness to lead, while a subtle chili heat emerges in the mid-palate. The finish is long and warming, balanced between residual sugar, smoke, and a light peppery spice.
