This sophisticated Belgian Golden Strong Ale undergoes a transformative sixteen-month maturation in whiskey barrels, evolving into a vibrant wild ale. The sensory journey begins with an aromatic bouquet of ripe pear and floral hops, enriched by vanilla and toasted oak from the wood. On the palate, a sharp, lactic acidity from wild fermentation creates a refreshing sour-sweet tension against a lean Pilsner malt base. Subtle whiskey notes provide a smooth, warming depth, while the high attenuation ensures a crisp, bone-dry finish. Effervescent and complex, it balances traditional Belgian esters with the bold, tart character of an aged sour.

Appearance. Deep gold color (6 SRM). Massive, rocky white head with excellent retention and characteristic Belgian lacing. High clarity despite the extended barrel aging.

Aroma. High intensity bouquet featuring prominent pear and apple esters. Low grainy-sweet malt is layered with moderate vanilla, coconut, and toasted oak notes from whiskey barrels. Moderate lactic tartness and a hint of earthy funk from wild fermentation complement low floral hop aromas.

Taste. Initial impression is sharply acidic and fresh. Light, grainy pilsner malt flavor is quickly overtaken by tart pome fruit esters and a lemon-like sourness. Low herbal hop flavor and moderate bitterness are accentuated by the dry finish. Complex oak tannins and a smooth whiskey character provide balance. Finishes very dry and crisp with a lingering peppery alcohol note.

Mouthfeel. Medium-light body that feels deceptively airy. Very high carbonation with a prickly, effervescent sensation. Noticeable but smooth alcohol warmth. Slight oak-derived tannin astringency and mouth-watering acidity.
