Utilizing microflora sourced from Brouwerij De Brabandere’s iconic oak foeders, it presents a distinctive funky character that elevates the style’s classic profile. Expect a vibrant citrus-sour snap that complements the traditional zesty orange peel and coriander spice. The wild microflora adds a layer of tartness and subtle earthy depth not found in standard versions, while the unmalted wheat provides a smooth, bready foundation. It is an intensely refreshing, bone-dry ale that emphasizes a bright, acidic brightness and lively carbonation over malt sweetness, finishing crisp and clean.
Appearance. Pale straw (SRM 2-3). Very cloudy to opaque with a characteristic milky, whitish-yellow glow from suspended starch. Features a dense, white, moussy head with excellent retention and delicate lacing.
Aroma. High intensity with a complex interplay of lactic tartness and classic spices. Bright lemony citrus and zesty orange notes lead, followed by perfumy coriander and a funky, herbal, slightly earthy background from foeder-derived microflora. Moderate bready wheat maltiness provides a grainy, sweet-smelling anchor.
Taste. The initial impression is refreshingly tart and crisp, featuring a pronounced citrus-sour flavor. Layers of zesty orange and lemony coriander blend with a light, bready wheat malt backbone.
