Spires is a vibrant American Pale Ale that showcases a sophisticated layering of New Zealand and Pacific Northwest hops. The sensory experience is led by the stone fruit and orchard-like qualities of Rakau, which provides notes of ripe apricot and peach. This is complemented by the bright grapefruit and lime zest typical of Citra, while Simcoe adds a grounding layer of resinous pine and subtle passion fruit. A lean, neutral malt backbone offers supportive bready notes, allowing the hop-forward profile to remain the focus. The beer finishes crisp and dry, balancing moderate bitterness with a clean, lingering tropical fruit character.

Appearance. Pale golden to light amber (6-8 SRM) with excellent clarity. Pours with a moderately large, off-white head that demonstrates good retention and leaves fine lacing.

Aroma. Moderate-high hop intensity featuring prominent grapefruit, apricot, and resinous pine from the use of Citra, Rakau, and Simcoe. Low bready and grainy maltiness supports the hop profile. Clean fermentation with no significant esters.

Taste. Initial flavors of lime, peach, and tropical fruit follow the aroma. Moderate to high hop bitterness is balanced by a subtle, cracker-like malt presence. The fermentation is clean, leading to a dry finish where the piney and citrus hop characters linger without being harsh.

Mouthfeel. Medium-light body with moderate-high carbonation. The texture is smooth and crisp, lacking any astringency, with a very subtle hint of alcohol warmth appropriate for the 5% strength.
