Dansk Mjød Ribe Mjød is a potent Fruit and Spice Mead crafted to honor Scandinavia's oldest town. This historical recreation features a robust base of honey bolstered by the tart addition of apple juice and the unique, resinous infusion of porse. The sensory experience is dominated by an intense honey sweetness that is artfully balanced by the crisp acidity of apples and the earthy, herbal bitterness of porse. At 19% ABV, it presents a significant, vinous warmth reminiscent of a fine sherry or tawny port. The result is a deeply complex, full-bodied elixir that captures a rustic, Viking-era profile.
Appearance. Deep burnished gold to copper-amber; brilliant clarity; still with significant legs and high viscosity; no head formation.
Aroma. High intensity aromatics of floral honey, beeswax, and caramelized sugars; notable herbal and woody notes of porse providing a resinous counterpoint; subtle cooked apple and cider-like esters; prominent but clean ethanol warmth.
Taste.
