The wild fermentation creates a rustic, complex backbone where earthy Brettanomyces funk and bright lactic acidity elevate the fruit character. Strawberry provides a delicate floral top note, while the Apricot and Tangerine drive a zesty, citrus-forward tartness. The Dark Sweet Cherry adds a subtle, wine-like depth and a hint of tannic structure. This beer is exceptionally dry and effervescent, balancing its intense fruit profile with a crisp, puckering finish that emphasizes the interplay between orchard fruits and wild yeast character.

Appearance. Pours a hazy, deep reddish-pink to amber-orange hue (SRM 10–14) with a moderate, pale-pink tinted head that shows fair to low retention; slight haze is present from fruit solids and wild yeast suspension.

Aroma. High intensity; dominant notes of jammy strawberry and ripe apricot are immediately apparent, supported by a sharp tangerine citrus zest. A moderate lactic sourness is present alongside earthy, leathery Brettanomyces funk. Malt character is minimal, offering a faint hint of sourdough bread.

Taste. The initial impression is sharply tart and refreshing, led by the citrusy punch of tangerine and acidic apricot. Strawberry and Dark Sweet Cherry flavors appear as complex fruit esters rather than sugary sweetness. Hop bitterness is virtually absent, allowing the fermentation-derived acidity to provide the balance. The finish is bone-dry and clean, with a lingering fruit-skin tartness and mild earthy funk.

Mouthfeel. Medium-light body with high, prickly carbonation that enhances the perceived acidity. A very light tannic astringency from the cherry skins adds a touch of structure. Alcohol warmth is low and well-integrated.
