This Mediterranean interpretation of an Imperial Stout offers a luxurious sensory experience shaped by molecular precision. The beer presents a deep, opaque mahogany hue crowned by a dense, creamy tan head. On the nose, intense coffee and roasted malt aromas intermingle with the jammy sweetness of dried figs and a distinctive, cooling hint of fennel. Aging in chestnut barrels provides unique structural complexity, imparting nuanced notes of vanilla and toasted walnut. The palate is opulent and velvety, balancing robust roasted bitterness with the caramelized richness of the fruit. It finishes with a harmonious blend of earthy wood and a lingering, sophisticated anise-like freshness.
Appearance. Jet black and completely opaque (SRM 40+). Features a persistent, abundant, and creamy deep tan head with excellent lacing and high viscosity.
Aroma. High intensity with a rich blend of espresso, dark chocolate, and roasted grain. Prominent esters of dried figs and raisins provide a deep fruit character, complemented by a subtle, fresh herbal note of fennel. Chestnut barrel aging adds earthy, nutty complexity with hints of vanilla and caramel.
Taste. Powerful initial impression of bittersweet chocolate and toasted grain. The mid-palate reveals layers of caramelized sugar and rich dried figs. Moderate hop bitterness and roasted char provide balance against a medium-sweet malt backbone. Specific notes of walnuts and a faint anise-like quality from fennel emerge toward the long, warming finish of espresso and toasted wood.
Mouthfeel. Full-bodied and chewy with a lush, velvety, and opulent texture. Carbonation is low to moderate. A significant, smooth alcohol warmth is present and well-integrated, reflecting the high gravity without being sharp.
