This Cold IPA presents a vibrant, ultra-clean profile driven by its Extra Pale Pilsner Malt base and cold fermentation with Bavarian lager yeast. The hop-forward character is led by a massive dry-hopping of Citra and Simcoe, delivering an intense aromatic punch of citrus, pine resin, and soft stone fruits. On the palate, Ekuanot Incognito provides a distinctive layer of fresh papaya, beautifully integrated into a bone-dry, crisp finish. Brilliantly clear and highly refreshing, it balances firm bitterness with a lean malt backbone, emphasizing the bright, modern hop expression while maintaining the snappy drinkability of a lager-influenced American IPA.
Appearance. Pale straw to gold (6-8 SRM). Brilliant clarity with a tall, persistent white head and delicate lacing.
Aroma. High intensity featuring prominent grapefruit, lime, and resinous pine from Citra and Simcoe. Low, grainy-sweet maltiness from the Pilsner base supports the hops. Exceptionally clean fermentation with no discernible esters.
Taste. Sharp, clean initial impression with dominant flavors of citrus zest and resin. Ekuanot contributes a specific note of fresh papaya mid-palate. Low, cracker-like malt flavor provides a lean foundation for medium-high bitterness. Finishes very dry and crisp with a lingering hoppy aftertaste.
