This International Pale Lager is a refined take on the Japanese Rice Lager tradition, offering a crystal-clear, pale straw pour topped with a delicate white foam. The flaked rice creates an exceptionally crisp and lean chassis, allowing subtle grainy sweetness to mingle with a whisper of herbal hops. What distinguishes this brew is the inclusion of kombu, which introduces a quiet, savory umami depth that elevates the clean fermentation profile. It finishes remarkably dry and refreshing, balancing the light bready malts with a gentle, thirst-quenching bitterness that lingers briefly before inviting another sip.
Appearance. 2–4 SRM. Brilliant clarity, pale straw to light gold. Persistent white frothy head with fine lacing.
Aroma. Low intensity. Clean grainy-malty scent with a delicate sweetness from flaked rice. Very low herbal and floral hop notes. A subtle, unique savory oceanic trace from the kombu adds complexity without overwhelming the clean fermentation profile.
Taste. Initial impression is crisp and highly attenuated. Moderate grainy-malt flavors with a light crackery quality. The flaked rice provides a neutral, lean profile, while the kombu offers a faint, savory umami middle. Hop bitterness is medium-low, providing just enough balance against the malt. Finishes very dry and clean with a short, neutral aftertaste.
Mouthfeel. Light body with a crisp, refreshing texture. Moderately high carbonation provides a prickly carbonic bite. No astringency and negligible alcohol warmth.
