Omerta is a vibrant American IPA that exemplifies the modern West Coast style with brilliant clarity and a focused hop profile. The aromatic profile is intense, led by the resinous pine and grapefruit of Simcoe and Simcoe DynaBoost. Mosaic Spectrum introduces layers of tropical fruit and subtle berry, while Nectaron adds juicy stone fruit and passionfruit notes. Strata CGX provides a complex, dank herbal finish with a hint of strawberry. A lean, crackery malt base provides a neutral stage for these hops to shine, culminating in a firm bitterness and a snappy, dry finish that emphasizes aromatic punch over sweetness.
Appearance. Deep gold color (SRM 6) with brilliant clarity. Pours with a medium-sized, long-lasting white head that leaves consistent lacing.
Aroma. High intensity hop-forward aroma featuring dank pine, grapefruit, and tropical passionfruit. Low, clean grainy maltiness provides a neutral background. Very clean fermentation profile with no discernible yeast-derived esters.
Taste. Leading with intense hop flavors of citrus zest and resinous pine. The mid-palate reveals stone fruit and tropical berry notes. Bitterness is firm and high, balancing a very low, bready malt presence. The finish is remarkably dry and crisp, with a lingering citrus and herbal hop aftertaste.
