This mature 2016 vintage Heritage Cider showcases a rustic, unfiltered profile born from wild apples and traditional varieties found in old orchards. The sensory experience is defined by a sophisticated tension between the sharp, bright acidity of wild fruit and the concentrated richness provided by a touch of ice cider. Expect a layered aromatic profile of bruised apple and earthy minerals, leading into a palate where sun-ripened pomaceous fruit meets a delicate, honeyed sweetness. Its maturation has rounded the tannic structure, resulting in a complex, off-dry finish that celebrates the unrefined elegance of artisanal Polish cidermaking.
Appearance. Deep gold to light amber color (SRM 6-9); hazy and unfiltered appearance; very low head retention with a brief white rim; still to lightly sparkling.
Aroma. High intensity of ripe and fermented apples; distinct earthy and slightly funky notes suggestive of a rustic cellar; subtle honey-like sweetness and dried floral notes; no hop or malt character present.
Taste. Initial impression is tart and bright from the wild apples; complex flavors of baked apple and spice; very low sweetness is perfectly balanced by moderate tannic astringency; finish is long and off-dry with a lingering orchard-fruit character; no hop bitterness.
Mouthfeel. Medium body with a slightly viscous texture from the ice cider addition; moderate carbonation; light alcohol warmth; noticeable but smooth tannic grip on the palate.
