This Saison presents a sophisticated rustic profile, driven by a base of Organic Pilsen malt and substantial malted rye. The aroma is a complex tapestry of funky tropical fruit and earthy leather from a long secondary fermentation with Brettanomyces, complemented by the floral and spicy notes of continental hops. On the palate, the rye provides a distinctive peppery bite that cuts through the lean, grainy sweetness of the Pilsen malt. A bright lactic acidity from the mixed-culture fermentation adds a refreshing tartness, leading into a bone-dry, effervescent finish. It is a vibrant, farm-inspired ale that balances funk and spice with a crisp, drinkable elegance.
Appearance. Pale gold with a slight hazy tint. Features a dense, rocky, white head with excellent persistence and significant lacing. Highly effervescent.
Aroma. High intensity featuring a mix of spicy rye and earthy, floral continental hops. Pronounced fermentation character includes fruity esters of pear and citrus, overlaid with Brettanomyces-driven notes of hay, leather, and tropical funk. Subtle lactic sharpness.
Taste. Very dry with a lean, grainy malt character from the Pilsen malt and a sharp, peppery spice from the malted rye. Continental hops provide moderate floral bitterness. Complex fermentation flavors of citrus and funk are balanced by a refreshing lactic tartness. Finishes crisp and bone-dry with a lingering spicy-funky aftertaste.
Mouthfeel. Medium-light body with very high, prickly carbonation. Subtle, well-integrated alcohol warmth is present. Crisp and refreshing without astringency.
