This classic Saison showcases the rustic elegance of Cyclic Beer Farm’s house mixed culture, where yeast and Brettanomyces weave a tapestry of bright citrus fruit and delicate peppery spice. Built upon a foundation of 100% Belgian Pilsen malt, the profile remains exceptionally crisp and lean. Generous additions of continental hops provide a floral, earthy counterpoint to the vibrant fermentation character, ensuring a structured bitterness. This farmhouse ale is defined by its high attenuation and lively effervescence, culminating in a bone-dry finish that emphasizes its refreshing nature and intricate, no-nonsense fermentation profile.
Appearance. Pale gold (approx 5 SRM) with a slight haze from the unfiltered house culture. Pours with a dense, rocky white head that shows excellent retention and leaves intricate Belgian lacing.
Aroma. High intensity with a complex mix of lemon and grapefruit esters, accompanied by moderate peppery phenols. Subtle earthy and floral continental hop notes complement a light, grainy cracker-like malt presence. A faint, rustic Brettanomyces character adds notes of dry hay.
Taste. Initial impression is very dry and effervescent. Low, soft grainy malt flavor from the Pilsen malt is quickly overtaken by moderate citrus fruit and spicy yeast character. Hop flavor is moderate and floral. Finishes bone-dry with a lingering peppery spice and a clean, refreshing bitterness.
Mouthfeel. Medium-light body with high, effervescent carbonation. Very low alcohol warmth. Crisp and refreshing without any astringency.
