Pakeha is a sophisticated Straight Sour Beer that elegantly bridges the gap between wild ale and fine sparkling wine. At 7% ABV, it presents a refined, vinous character amplified by the addition of Kiwi wine and Parellada grapes. The sensory profile is led by a bright, clean lactic acidity that illuminates notes of tart green apple, white floral blossoms, and succulent stone fruit. Subtle, crackery malt provides a lean foundation, allowing the nuanced, grape-forward esters and kiwi tartness to shine. It finishes exceptionally dry and crisp, with a sparkling effervescence reminiscent of a premium coastal white wine.
Appearance. Very pale straw (2 SRM); slightly hazy with a brilliant core. Large, frothy white head that dissipates quickly due to high acidity; moderate lacing; highly effervescent.
Aroma. High intensity aroma of sharp lactic sourness and bright lemon. Prominent notes of tart kiwi, green apple, and white floral grape must from the Parellada. Low crackery malt support; no hop aroma. Clean, vinous fermentation character without funk.
Taste. Dominant, clean lactic sourness with a lemony edge. Initial flavors of tart kiwi and crisp white grape skin evolve into a light, grainy malt mid-palette. Hop bitterness is undetectable. The finish is bone-dry and highly acidic, with lingering notes of tart apple and citrus peel.
Mouthfeel. Light-medium body with high, prickly carbonation. Crisp, tongue-tingling acidity provides a refreshing bite. A very subtle, well-integrated alcohol warmth is present. No astringency.
