This Wild Specialty Beer showcases the elegant intersection of viticulture and rustic brewing. Featuring second-use Moscatell grapes from winemaker Sicus, the profile is defined by an enchanting floral and honeyed grape perfume. The maceration of these grapes in sour beer, blended into a barrel-aged Grisette base, results in a complex sensory journey of white flower blossoms, wild yeast funk, and delicate oak. Despite its 6.2% ABV, the beer maintains the refreshing, low-density character of a classic Grisette, transformed by bright acidity and the mineral-driven, vinous influence of the Moscatell skins. It is a nuanced, bone-dry expression of terroir-driven fermentation.
Appearance. Pours a slightly hazy, pale gold to deep straw (3–5 SRM) with a vigorous, effervescent white head that dissipates rapidly to a thin collar, leaving minimal lacing. Fine bubbles continue to rise, highlighting its lively carbonation.
Aroma. High aromatic intensity led by floral Moscatell grape notes, elderflower, and ripe pear. Supporting these are moderate wild fermentation traits including hay, dusty cellar, and a light lemony tartness. A subtle, spicy yeast phenol from the Grisette base mingles with faint toasted oak and a touch of vinous minerality.
Taste. The palate opens with a sharp but clean lactic acidity, followed immediately by the distinctive floral and stone fruit flavors of Moscatell grapes. The base beer provides a cracker-like malt backbone that is quickly overtaken by earthy Brettanomyces funk and a touch of tannin from the grape skins. Hop bitterness is very low, as the profile is balanced by acidity rather than hops. It finishes bone-dry and crisp with a lingering floral and mineral aftertaste.
Mouthfeel. Medium-light body with a very high, prickly carbonation that enhances the perception of dryness. There is a light, pleasant astringency from the grape skin maceration and a refreshing acidic bite. No significant alcohol warmth is present despite the moderate strength.
