This Berliner Weisse presents a sophisticated evolution of the classic German sour wheat ale, elevated by the infusion of Jasmine tea and mandarin. A sharp, clean lactic acidity defines the palate, beautifully harmonized by the elegant, perfume-like floral notes of Jasmine tea. The mandarin provides a vibrant, citrusy zest that brightens the profile and complements the lemon-like tartness inherent to the fermentation. Beneath these botanical and fruit aromatics, a delicate layer of raw bread dough and wheat malt provides a soft, structural foundation. It finishes exceptionally dry and effervescent, leaving a lingering trail of citrus peel and floral tannins that enhance its refreshing qualities.
Appearance.Straw to very pale gold in color (2-3 SRM). Clarity is slightly hazy, common with wheat and tea additions. Features a large, dense, white head with poor retention and high effervescence.
Aroma.High intensity of sharply sour lactic character. Dominant floral notes of Jasmine tea are complemented by bright, citrusy mandarin orange. A light, raw bread dough wheat character is present, with no detectable hop aroma.
Taste.Initial impression is a clean, assertive lactic sourness. Flavors of tangy mandarin orange and fragrant jasmine florals dominate the mid-palate. A low grainy or doughy wheat malt flavor provides a subtle backdrop. Hop bitterness is undetectable; balance is achieved through acidity and tea-derived tannins. The finish is very dry, crisp, and refreshing with a lingering citrus zest.
Mouthfeel.Medium-light body, slightly more substantial than traditional examples due to the 5.5% ABV. High carbonation creates a prickly, lively sensation. Very low alcohol warmth is well-integrated. Crisp acidity with a faint tea-driven astringency.
