This 2022 vintage from Cyclic Beer Farm presents a vibrant, garden-fresh interpretation of a Straight Sour Beer. Utilizing a house sour base blended with mixed-fermentation barrel-aged Saison, it offers a sophisticated profile where earthy garden beets take center stage. The sensory journey begins with an inviting lactic tartness, immediately complemented by the deep, root-like sweetness of the beets. The barrel aging lends a whisper of oaky structure, while the Saison component adds layers of rustic complexity and subtle spice. Refreshing and bone-dry, it balances savory vegetal notes with bright, citrusy acidity for a unique, terroir-driven experience that remains light and effervescent on the palate.
Appearance. A striking deep magenta to ruby red color (SRM 25+). Features a large, dense, light-pink tinted head with poor retention. Clarity is somewhat hazy due to the heavy beet infusion and mixed fermentation cultures.
Aroma. High intensity with a dominant, sharply sour lactic character. The primary aroma is deeply earthy and savory, reminiscent of fresh-turned soil and sliced beets. Complementary notes of lemon and tart apple esters are present, alongside a subtle rustic funk and faint woody oak from the barrel-aged Saison components. No hop aroma is detectable.
Taste. Clean, powerful lactic sourness dominates the initial impression, quickly followed by the distinctive, sweet-yet-savory flavor of garden beets. The malt character is low, providing a thin bready or crackery backbone. No hop flavor or bitterness is present. The finish is bone-dry and highly acidic, with lingering earthy notes and a touch of spicy phenolics from the mixed-fermentation culture.
Mouthfeel. Light body with high, effervescent carbonation that enhances the crisp acidity. Alcohol warmth is low and well-integrated at 5.3% ABV. The mouthfeel is lean and refreshing, with a slight puckering quality and minimal astringency.
