This Imperial Stout presents an indulgent sensory experience, defined by its maturation in oak barrels and the addition of darkened Dulce de leche. The nose is a decadent tapestry of caramelized sugar, toasted marshmallow, and deep vanilla, underscored by Cycle Brewing Company’s characteristic rich, spirit-soaked oak. On the palate, the intense sweetness of the caramelized milk solids melds seamlessly with a base of bittersweet chocolate and espresso. Layers of toffee and dark fruit emerge against a velvety, viscous backdrop. The finish is long and warming, balancing the decadent sweetness with charred wood tannins and a lingering, luxurious roasted grain bitterness.
Appearance. Jet black and completely opaque (40+ SRM). Pours with a thick, deep tan head that shows moderate to low retention, leaving oily legs and a dark collar on the glass due to high viscosity and alcohol content.
Aroma. High intensity with a complex blend of darkened caramel, toffee, and vanilla from the Dulce de leche and barrel aging. Deep roasted malt notes of espresso and bittersweet chocolate are prominent, supported by subtle dark fruit esters of raisin and prune and a smooth, noticeable bourbon-like alcohol presence.
Taste. Initial impression is richly sweet and creamy, dominated by toffee and caramelized sugar. The mid-palate reveals layers of dark chocolate, charred grain, and black coffee. Hop bitterness is moderate but mostly provides balance to the thick malt and adjunct sweetness. The finish is long and warming with lingering notes of vanilla, oak tannins, and a hint of dark fruit.
Mouthfeel. Full to very full-bodied with a thick, chewy, and syrupy texture. Carbonation is low to moderate, enhancing the velvety mouthfeel. A smooth, significant alcohol warmth is present but integrated, without being harsh or solventy.
