Walled Gardens 2021 is a sophisticated Wild Specialty Beer that beautifully captures the intersection of spontaneous fermentation and English terroir. Pouring a deep hazy gold, it offers an intense aromatic profile where the perfume of Isle of Wight Sunny Cot apricots mingles with rustic Brettanomyces notes of hay and earthy funk. The 19-month maturation in neutral French oak barrels provides a structural backbone and subtle woody depth without overshadowing the fruit. On the palate, a vibrant lactic acidity elevates the stone fruit flavors, which remain remarkably fleshy despite a bone-dry finish. Lingering apricot skin tartness and delicate oak tannins provide a complex, refreshing conclusion.
Appearance. Deep gold to light amber (7-9 SRM); hazy and unfiltered with a fine sediment. Features a white, frothy head with moderate retention that leaves light lacing.
Aroma. High intensity; dominant aromas of fresh apricot, lemon zest, and white peach. Secondary notes of farmhouse funk, including damp hay, goaty hints, and aged wood. Malt is low, appearing as cracker-like sweetness.
Taste. Initial sharp, clean lactic acidity followed by a burst of dry apricot fruitiness and citrus. No hop bitterness is perceived. Fermentation character is complex with horsey and earthy notes. The finish is very dry, crisp, and acidic with a lingering fruit-skin tartness and a touch of oak tannin.
Mouthfeel. Medium-light body with a lean, crisp texture. High carbonation provides a prickly, effervescent sensation. Very low alcohol warmth; a slight, pleasant astringency from the fruit skins and oak aging.
