Red Tails presents a vibrant, fruit-forward sensory experience driven by a dual-fruit refermentation. Intense notes of Morello cherries offer a deep, almond-like pit character and sharp tartness, while the Driscoll Maravilla raspberries contribute a bright, floral berry sweetness. The fermentation profile is defined by a refined Brettanomyces influence, layering subtle notes of wet hay and earthy funk over a dry, lean malt base. This Brett Beer balances the assertive fruit presence with a delicate tannic structure and a crisp, effervescent finish, showcasing a sophisticated integration of wild yeast and premium local fruit.

Appearance. Deep ruby-red to garnet with a slight hazy luminescence; pours with a moderate, pink-tinted head that shows fair retention and leaves light lacing on the glass.

Aroma. High intensity; dominant aromatics of fresh-picked raspberries and dark, acidic cherries. Complemented by moderate Brettanomyces funk, manifesting as sun-dried hay and a touch of dusty cellar, with minimal pale malt sweetness.

Taste. Initial burst of tart red fruit, featuring succulent raspberry and sour cherry skin. Mid-palate introduces a complex, earthy funk and light wood-like tannins. Highly attenuated and bone dry with low hop bitterness, finishing with a lingering, acidic fruit brightness and a clean, funky aftertaste.

Mouthfeel. Medium-light body with high, prickly carbonation that enhances the perceived dryness. Alcohol warmth is very subtle, providing a gentle glow without harshness. Low fruit-skin astringency.

Process: A blend of 1, 2 and 3 year old golden ales brewed with malted barley and raw wheat. Spontaneously fermented and aged in neutral French oak barrels. Refermented on organic Driscoll Maravilla raspberries from Herefordshire, and sour Morello cherries from Kent.

Conditioning: Packaged with a small amount of priming sugar for natural carbonation in the bottle. We do not add yeast at this point, or at any point in the process. Bottles laid to rest on their sides and conditioned until release.

Tasting Notes: Vibrant raspberry and sour cherry on the nose with floral and earthy undertones. Tart, juicy fruit on the palate balanced by soft funk and gentle oak. Bright acidity and fine bubbles carry through to a crisp, dry finish.

Ingredients: Barley malt, raw wheat, aged hops, raspberries, sour cherries, water.
