This Brett Beer, built on a complex grain bill of malted barley, malted rye, malted oats, and raw wheat, offers a layered structural foundation. Spontaneously fermented and aged in neutral French oak, it exhibits a nuanced funk of wet hay and earth, perfectly integrated with the vinous depth of Ben Alder blackcurrants. The fruit provides a deep, dark berry vibrance that pierces through the rustic, spicy grain character. The influence of the oak lends a subtle tannic structure, rounding out a profile that is exceptionally dry, fruit-forward, and elegantly complex with a lingering, crisp finish.
Appearance. Deep ruby to dark purple-red with a soft, pink-tinged head of moderate retention. Noticeable haze is present due to the raw wheat and oats, though the beer retains a vibrant, saturated glow.

Process: A blend of 1 & 2 year old golden ales brewed with malted barley, malted rye, malted oats and raw wheat. Spontaneously fermented and aged in neutral French oak barrels . The beer was moved onto Ben Alder blackcurrants (Gorgate Fruit Farm, Norfolk) in tank. It remained there for 2 months before spending further time back in barrel. We then blended back with further components and packaged. Conditioning: Packaged with a small amount of priming sugar for natural carbonation in the bottle. We do not add yeast at this point, or at any point in the process. Bottles laid to rest on side and conditioned until release. Ingredients: Malted barley (pilsner), malted rye, malted oats, raw wheat, aged hops (whole leaf fuggles, whole lead Saaz & whole leaf strisselspalt), ben alder blackcurrants, water.
