This traditional Gueuze-style ale showcases the mastery of spontaneous fermentation and the complex artistry of a three-year blend. The double decoction turbid mash provides a foundational, grainy wheat structure that supports a vibrant, multi-layered profile. Aromas of aged hops—specifically those matured for four years—contribute earthy and herbal nuances rather than bitterness, intermingling with a sophisticated barnyard funk. Bright citrus rind and pome fruit esters leap forward, driven by the coolship inoculation. On the palate, a balanced, refreshing sourness cuts through light oak notes, finishing bone-dry and effervescent with a lingering, tart complexity that defines the Method Traditional approach.
Appearance. Deep golden (5-6 SRM) with brilliant clarity; features a thick, mousse-like, rocky white head with exceptional retention and delicate lacing.
Aroma. High intensity of complex funk including horse blanket, leather, and hay; moderate lactic sourness is accented by citrus peel and rhubarb fruitiness; subtle bready wheat and faint, seasoned oak finish.
Taste. Sharply tart and moderately sour initial impression; flavors of lemon zest and green apple transition into earthy, barnyard funk; low grainy malt presence; no hop bitterness; finishes very dry and crisp with a persistent tart aftertaste.
Mouthfeel. Medium-light body with very high carbonation; produces a prickly, effervescent sensation and a puckering, tart quality without harsh astringency; very light alcohol warmth.
