L’Brett d’Raspberry is a vibrant expression of the Brett Beer style, showcasing the marriage of wild fermentation and whole fruit. This golden ale base is transformed by an assertive addition of raspberries, offering an intense, jammy berry profile that dominates the senses. The secondary fermentation with Brettanomyces introduces rustic layers of wet hay, barnyard funk, and tropical stone fruit esters. Aging in oak barrels contributes a subtle tannic structure and soft vanilla notes, which provide a sophisticated backbone to the sharp, refreshing tartness. Effervescent and bone-dry, it represents a masterclass in fruit integration and wild yeast character.

Appearance. A striking deep pink to ruby-red hue (SRM 10-14 including fruit tint) with a slight haze. It is topped by a frothy, pink-tinted white head with moderate retention and delicate lacing.

Aroma. High intensity of fresh, jammy raspberries followed by a complex bouquet of Brettanomyces funk, including notes of wet hay, leather, and earthy minerals. Substantial esters of apricot and pineapple are present, with a background of toasted oak and a faint, cracker-like malt presence.
