The Terroir Blend 2021 is a masterfully executed Gueuze, representing a collaboration between Craftwork and Ninebarnyardowls. By blending one, two, and three-year-old spontaneously fermented coolship beers, it achieves a remarkable depth of character. The sensory profile is defined by a sharp, invigorating acidity and a sophisticated array of wild yeast traits including wet hay, aged leather, and earthy cellar funk. Bright notes of lemon zest and green apple emerge from the spontaneous fermentation, supported by a whisper of wheat-driven graininess. This blend finishes bone-dry, showcasing a vibrant effervescence and a complex, lingering tartness that reflects the unique microflora of both breweries.
Appearance. Deep golden color (SRM 6) with brilliant clarity. Features a thick, rocky, mousse-like white head with excellent retention and delicate lacing; highly effervescent with visible rising bubbles.
Aroma. High intensity with complex funkiness: barnyard, horse blanket, and hay. Notable fruitiness of citrus rind, rhubarb, and green pome fruit. Low bready wheat malt and a subtle, dusty oak presence. Cleanly acidic without any enteric or smoky faults.
Taste. Sharply sour and funky, mirroring the aroma's complex barnyard and leather notes. Low grainy malt flavor provides a brief foundation before being overtaken by tart citrus and pucker-inducing acidity. Bitterness is negligible; balance is achieved through sourness. Finish is remarkably dry, crisp, and clean with a long, funky aftertaste.
Mouthfeel. Medium-light body with a soft, velvety texture. Carbonation is high and prickly. Shows a light, integrated alcohol warmth and a puckering tartness without harsh astringency.
